Colin with Bacon, with or without Potato

For 4 Groins
- 800 g hake fillet (skinless)
- 12 thin slices of smoked bacon
- 2 tomatoes
- 1 white onion from the Cévennes
- Fresh parsley
- 3 bay leaves
- Salt pepper
- Olive oil
- 500 g of Noirmoutier potatoes
- Butcher's twine
Preparation
- Start by boiling the potatoes for 10 minutes.
- Surround each fish fillet with 3 strips of bacon (the sides and one side) then tie the hake with the thread as for a roast.
- Peel the tomatoes and cut them into small cubes. leave them aside for a few minutes in a colander to drain.
- Chop the onion and parsley, then mix them with the tomatoes.
Cooking
- At the bottom of a large dish, brush generously with oil and place the vegetables and bay leaf. Then place your hake fillets on it.
- Put your dish in the oven for 12 minutes at 200°. Add the potatoes at the end of cooking.
